The name of the restaurant derives from kompot, a non-alcoholic sweet beverage that is the part of culinary cultures of many countries in Central, Eastern and Southern Europe. It is cooked by boiling fruits such as strawberries, apricots, peaches, apples, gooseberries or cherries in a large volume of water, often with sugar or raisins as additional sweeteners and spices such as vanilla or cinnamon for richer flavor. It can be served hot or cold, depending on tradition and season. Indeed, this homemade variation on the juice theme is the ‘pearl’ of the restaurant: guests are offered to try various tastes of the beverage at the place and to buy take-away.
