Transcarpathian cuisine has absorbed the gastronomic traditions of Ukrainians, Hungarians, Romanians, Czechs, Slovaks, as well as Germans and Jews. Still, the Hungarian cuisine had the greatest impact on it. Most of the dishes that local restaurants offer are based on authentic Hungarian recipes.

Ukrainian food culture is unthinkable without the Hungarian cuisine, which is especially popular in the west of the country. The cuisine of the Hungarians is famous for its satiety, wide variety of dishes, as well as multiple interpretations of traditional treats. Other features of typical Hungarian food are an abundance of meat and paprika. The latter is so popular in Transcarpathia that they held festivals in its honor.

This is perhaps the most famous Hungarian dish in Western Ukraine. It is made of several types of meat, paprika, vegetables. All ingredients are boiled in large cauldrons on an open fire for about 3-4 hours. In some restaurants it is served not in plates or pots, but in bread.

Banosh is a cornmeal porridge with cream or sour cream. By tradition, it is cooked exclusively by men over an open fire. Properly cooked banosh has an extremely delicate creamy taste. In the menu of local restaurants you can also find tokan - another version of corn porridge, which, like banosh, is served with cracklings, cheese, smoked bacon, fried onions or white mushrooms.

This dish consists of grilled meats, onions, tomatoes, garlic, spices and cream. It can be made from a variety of meat types: pork, beef, chicken and fish. Traditionally it is accompanied by homemade pasta or dumplings.

This dish will appeal to those who love a combination of tender potatoes and smoked meat. To cook rakott krumpli, first they boil the jacket potato, then stew it with sour cream, sausage, eggs and cheese.
